June is National Dairy Month and a time when we all are reminded of the value of drinking milk for our good health and how important dairy products are. Milk and milk products come in many forms. * Milk - homogenized, pasteurized, whole, 2%, 1% and skim * Cream - the fat skimmed off the top of milk or separated by machine-centrifuges * Sour Cream - cream that has been fermented by the bacteria Streptococcus lactis and Leuconostoc citrovorum * Cultured buttermilk - fermented concentrated milk with the water removed using the same bacteria as sour cream * Powdered milk - may also be known as non-fat dry milk since the water is removed from the milk * Condensed milk - milk which has been concentrated by evaporation that often has sugar added for longer life in an opened can * Evaporated milk - less concentrated than condensed milk. The milk is without added sugar * Ricotta cheese - milk heated and reduced in volume * Butter - mostly milk fat, produced by churning cream * Buttermilk - the liquid left over after producing butter from cream * Cheese - produced by coagulating milk, separatingfrom whey and letting it ripen, generally with bacteria and sometimes also with certain molds * Cottage cheese- Soft, lumpy white cheese made from the curds of slightly soured milk * Cream cheese - produced by the addition of cream to milk and then curdled to form a rich curd or cheese made from skim milk with cream added to the curd. * Yogurt - milk fermented by Streptoccoccus salivarius ssp. thermophilus and Lactobacillus delbrueckii ssp, bulgaricus sometimes with additional bacteria such as Lactobacillus acidophilus * Ice cream - slowly frozen cream and emyulsifying additives * Ice milk - sweet frozen food similar to ice cream but containing less butterfat * Frozen custard - dessert resembling ice cream but with a boiled custard base * Frozen yogurt - yogurt with emulsifiers that is frozen With all of these options for milk, the question is are there recipes that use milk?
