Farmers Markets are fun to shop in, so don't miss visiting your local one during Farmers Market week from August 5 to August 11. They carry a colorful abundance of produce at such affordable prices. Visiting every week is a good idea, as often there are new varieties of fruits or vegetables not often found at regular grocery stores. And best of all, the prices are so much lower. This weekend I purchased a variety of early squashes, two bunches of large beets, 3 pounds of summer fruits and assorted types of lettuce for under $15.00. When advising clients who need to gain weight, I often recommend the higher calorie, starchy vegetables, as their complex carbohydrates pack more calories, and their bright, dark colors increase antioxidants in their diets. These squashes are perfect for making a Creamy Vegetable Soufflé, Creamed Vegetables, or Vegetables au Gratin.
